Ingredienti:
kg 1 Miscela al cacao "Blackery Forte" Molino Dallagiovanna
g 150 tuorlo
g 430 acqua
g 150 zucchero
g 20 sale
g 150 burro
g 26 lievito di birra
Procedimento:
Mettere nell’impastatrice zucchero e sale insieme a 350 di acqua e tutto il tuorlo, versare sopra la farina, e prima di azionare la macchina inserire anche 80gr di burro.
Quando l’impasto è incordato aggiungere i 70gr rimanenti di burro, ed in fine l’acqua.
Una volta che l’impasto è ben formato aggiungere il lievito, far girare l’impastatrice per 5/6 minuti.
Far puntare 30 minuti l’impasto coperto con pellicola a 24/25 gradi.
Grazie all’utilizzo di un abbattitore di temperatura portare l’impasto a 14 gradi al cuore, porre quindi in frigorifero tutta la notte a 4 gradi, e il giorno dopo sarà raddoppiato di volume e pronto per essere laminato.
