Achille Zoia lends his skill and experience to Molino Dallagiovanna. This renowned confectionary artist was Pastry Chef of the year 1998/99, was pronounced King of Italian Pastry Chefs in the Cakes Guide published by Touring and according to the Gambero Rosso produces one of the best panettonis in Italy.
The already excellent Dallagiovanna flours are no longer simply tested in the laboratory, but also "in the oven" at the hands of a master pastry chef who uses his vast experience to see how to improve the mixes.
