Sapori d'Italia - Microbi Gourmet
In religious and mythological symbolism, bread and wine together represent the certainty of a life lived with vital energy and joy. And to have both, the work of men and of billions of miniscule allies is necessary.
Giorgio Ottogalli, a brilliant microbiologist, internationally renowned as a specialist in dairy products, will forgive us if we have stolen the title of one of his important works: “gourmet microbes”, or single cell organisms (unicellular) able to transform what we eat and drink, not only modifying the structure and the chemical composition, but also contributing to the complexity and quality of tastes and aromas. Without forgetting their fundamental importance for digestion and the nutritional characteristics of the same foods.
